Campari-style spritz
Red bitter, prosecco, and soda. Drier than the sunset spritz, so the bitter measure comes down.

Why the pour is smaller
Bitter orange aperitivo is built to be 60 ml of a spritz. A red bitter is usually stronger, less sweet, and more bitter. In this style, start at 45 ml with 90 ml prosecco and 30 ml soda. Move to 60 ml only if you already like it stern.
The garnish stays orange. Mint does not belong here.
The rest of the bitter family
A Venetian spritz adds a green olive. An artichoke spritz is savory rather than citrus-bitter. A ruby spritz splits bitter orange and red bitter. A sbagliato-style glass swaps the soda for sweet vermouth and gets richer.
None of these are a Hugo. If you want flowers and mint, change hubs.
