Limoncello spritz

Sweet lemon liqueur, dry prosecco, a splash of soda, and a lemon wheel. Less liqueur than you think.

The ratio

90 ml prosecco, 30 ml limoncello, 30 ml soda. Limoncello does not follow 3-2-1. It is sweeter and stronger than bitter orange aperitivo, so 60 ml would taste like pudding.

Chill the limoncello. A warm pour tastes hotter and sweeter than the same measure from the fridge.

When to change it

Basil wants a slightly smaller liqueur pour, about 25 ml. Still white wine wants about 20 ml, because there is less fizz to hide the sugar. A pitcher is six single glasses, with soda added at the end.

There is no non-alcoholic limoncello that is still limoncello. The virgin lemon spritz uses syrup and fresh juice instead.
