  • 750 mlProsecco, chilled
  • 180 mlElderflower cordial
  • 60 mlSoda water, chilled
  • 1 bunchFresh mint
  • 2Limes, sliced

Steps

Build it in a wine glass.

  1. 1Chill the bottle, cordial, soda, and a large jug.
  2. 2Add ice, mint, and lime slices to the jug.
  3. 3Pour in the cordial, then the prosecco.
  4. 4Add the soda just before serving. Stir once and pour.

A Hugo pitcher fails when the soda goes in an hour early. The wine goes flat and the cordial tastes heavier. Mix the prosecco and cordial over ice, then lengthen each round, or the whole jug, at the moment you pour.

These amounts follow the house Hugo six times: 60 ml prosecco, 30 ml cordial, 10 ml soda. For a drier jug, use the tall Hugo ratio instead and cut the cordial down to 120 ml.
