A Hugo Spritz is prosecco, elderflower, a short splash of soda, mint, and lime. Wine is the body of the drink. The cordial is there for scent, which is why this house ratio stays at 30 ml instead of turning the glass into syrup.
This is the Easy Spritz build: 60 ml prosecco, 30 ml elderflower cordial, 10 ml soda. It is shorter and more floral than a tall alpine pour. If you want more wine and less sweetness, make the tall Hugo Spritz instead.
Clap the mint once in your hand so it smells, then drop it in. Muddling it makes the drink taste like cut grass. Lime, not orange, is the citrus that belongs with elderflower.
Elderflower cordial and elderflower liqueur are not the same strength. Cordial is the measure above. For a liqueur such as St-Germain, use the Hugo with elderflower liqueur, which keeps the pour smaller.
