Lemon Balm Hugo
Greener than elderflower, and closer to the first Hugo glasses.

Lemon balm, mint, and prosecco. · 1 drink
- 100 mlProsecco, chilled
- 15 mlLemon balm syrup
- 40 mlSoda water, chilled
- 1 sprigFresh mint
- 1Lemon slice
Steps
Build it in a wine glass.
- 1Fill a wine glass with ice.
- 2Add the lemon balm syrup and soda.
- 3Top with prosecco.
- 4Garnish with mint and lemon.

Elderflower is the Hugo most people meet now. The earlier glass, from South Tyrol in the mid-2000s, was lemon balm syrup, prosecco, soda, mint, and lemon. Elderflower won because it was easier to buy, not because the first version was a mistake.
Lemon balm syrup is brighter and less honeyed than elderflower. If you cannot find it, do not fake it with lemonade. Make the elderflower Hugo instead.
