Still wine plus a bitter aperitivo is a spritz from before the prosecco years, and it is often better with food. The bubbles in a classic glass are lovely outside. At the table they fight a salty plate.

The bitter measure is 40 ml, not 60, because still wine does not dilute flavor the way prosecco foam does.
