Build it in a wine glass.

The word spritz is tied to spraying wine with sparkling water. Bitter orange and elderflower came later. A dry white, very cold, cut with soda, is still the most useful glass when you want a drink and also want to taste dinner.
Two parts wine to one part soda is a starting point. If the wine is delicate, use less soda. If it is heavy, use more. Skip sweet wine.
