White Wine Hugo
Same scent, still wine. Useful when the prosecco is already gone.

Ingredients & ratios
White wine, elderflower, mint. · 1 drink
- 90 mlCold dry white wine
- 20 mlElderflower cordial
- 40 mlSoda water, chilled
- 1 sprigMint
- 1Lime wheel
Steps
Build it in a wine glass.
- 1Choose a dry white with some acidity. Avoid anything oaky or sweet.
- 2Build cordial, wine, and soda over ice.
- 3Add mint and lime.

Prosecco makes a Hugo feel like a spritz. Still wine makes it feel like a wine spritz that borrowed the Hugo garnish. Both are worth pouring. The still version is better at the table, where endless bubbles get tiring.
If the white wine is soft or slightly sweet, cut the cordial to 10 ml. You can top with a little prosecco instead of soda if you want some of the fizz back.
